Are you drooling like I am right now? Brownies and Oreos….DOUBLE STUF Oreos! Oh no, not those regular Oreos, those are for lightweights but the Double Stuf Oreos. And cream cheese. And chocolate chips. Pinch me because I think this recipe from Yammie’s Noshery is just a dream.
Oreo Brownie Cupcakes
Makes about 2 1/2 dozen
Servings: 2 dozen
Ingredients
- 2 sticks butter
- 2 1/4 cups sugar
- 1 1/4 cups cocoa powder
- 1 tbsp vanilla
- 4 eggs
- 1/2 tsp salt
- 1 tsp baking powder
- 1 1/2 cups all-purpose flour
- 20 double stuffed oreos crushed
- 1 cup chocolate chips
Cream Cheese Oreo Frosting:
- 8 oz cream cheese softened
- 3/4 cup butter softened
- 3 1/2 cups powdered sugar
- 20 double stuffed oreos crushed
Instructions
- Preheat oven to 375º. Grease muffin tins well.
- Melt the butter in the microwave in a large, microwave safe bowl. Add the sugar and microwave until the sugar is dissolved, but not bubbling.
- Whisk in the cocoa powder, vanilla, and eggs.
- Mix together the salt, baking powder and flour. Add the the rest and stir well.
- Fold in the chips and Oreos.
- Fill muffin tins 3/4 full. Bake for about 17 minutes. Run a knife around each one when you get them out. Let them cool before you remove them.
Cream Cheese Oreo Frosting:
- Beat together the cream cheese and butter. Add the powdered sugar half of a cup at a time until desired consistency is reached. Fold in Oreos.
