A tres leches cake, also called pastel de tres leches is a type of sponge cake. Butter cake is soaked in three different types of milk, which creates a light airy cake. The texture is far from soggy and very popular throughout Latin America. Modern Taste adapts tres leches into cupcake form which bake brilliantly.
Tres Leches Coconut Cupcakes
Ingredients:
cupcakes:
200 g all purpose flour
1 1/2 tsp baking powder
pinch of salt
113 g butter at room temperature
180 g sugar
2 eggs
1 tbsp vanilla extract
120 ml milk
Cream butter with sugar. Add eggs and vanilla extract. Mix flour with salt and baking powder. Add half of it to butter mixture, then still mixing start slowly pouring milk. Add remaining flour and mix.
Fill muffin pan. Bake in 180C (350F) for 20 minutes. Cool completely and make holes in each cupcake using toothpick or fork.
milk mixture:
200 ml coconut milk
200 ml sweetened condensed milk
Mix well both milks. Pour them all over the cupcakes and leave for about 30 minutes.
frosting:
250 g mascarpone cheese
4 tbsp sugar
5 tbsp coconut milk
Cream cheese with sugar. Start adding coconut milk, one tbsp at a time and keep mixing. Frost soaked cupcakes.
