Spicy Sugar Cinnamon Roll Cupcakes

Mmmm….cinnamon roll flavored cupcakes topped with cream cheese buttercream frosting.  I’m thinking Julie’s Cafe Bakery just might have hit upon a near perfect breakfast treat.  Go on, have one with your morning cup of coffee.  You know you want to.

Spicy Sugar Cinnamon Roll Cupcakes

Ingredients

  • 1/3 cup of unsalted butter
  • 1 medium egg
  • 1 1/4 cup of flour
  • 1 1/4 teaspoon of baking powder
  • 1/4 teaspoon of sea salt
  • 1/4 cup + 2 tablespoons of packed brown sugar
  • 1 teaspoon of cinnamon
  • 3/4 cup + 2 tablespoons of raw sugar
  • 1 teaspoon of vanilla
  • 1/2 cup + 2 tablespoons of whole milk

Butter Cream Cheese Frosting

  • 8 ounces of Cream Cheese
  • 1/2 cup of unsalted butter
  • 2 teaspoons of vanilla extract
  • 5 1/2 cups of powdered sugar

Instructions

  1. Begin by Lining 12 muffin cups with clean paper liners.  Pre-heat stove to 350 F.
  2. Start by bringing the unsalted butter and eggs to about room temperature.  Using  a smaller dish, stir together the flour, baking powder together with sea salt.  With a different dish, mix dark brown sugar as well as cinnamon.Using a sizable dish, whip butter till fluffy.  Include sugar and then whip till blended.  Add the egg along with the vanilla.  Combine flour in 3 parts, switching with whole milk (flour, whole milk, flour, whole milk, flour).
  3. Add one tablespoon of the mixture to the clean paper liners.  Add One teaspoon of cinnamon mixture to the cups.  Add the left over mixture to the muffin cups (around 2 tablespoons each).  Dust the tops using the leftover cinnamon mixture.
  4. Cook cupcakes for 20 to 22 minutes  (or until finally a toothpick comes out with only crumbs adhering).  Allow to cool on the wire rack for about 10 minutes and then remove from the cooking dish.  Let them cool down to room temperature prior to frosting.

Butter Cream Cheese Frosting

  1. Let cream cheese along with the butter to reach room temperature.
  2. Whip cream cheese, unsalted butter as well as vanilla till fluffy.  Switch food mixer right down to low and then combine powdered sugar, at a 1/2 cup each time, till frosting is spreadable and fluffy.
  3. As soon as all the powdered sugar is included, switch food mixer to high and then whip till airy and blended.
