Chocolate Strawberry Cupcakes

I suppose we should at least acknowledge that Valentine’s Day is just around the corner.  For single people like me – the Cupcake Lady – it’s usually just another day but this is not always about me.  Ok, it should never be just about me.  But anyway, I thought you might enjoy these chocolatey strawberry cupcakes from Your Cup of Cake in case you are thinking about chocolate covered strawberries for your sweetie.  Why not opt for a cupcake instead?  Just sayin’

Chocolate Strawberry Cupcakes


Chocolate Strawberry Cake:
1 box devil’s food cake mix
3 eggs
1/2 C. oil
1/2 C.  sour cream
1/3 C. milk
1/2 C. strawberry puree (place berries in a blender and blend)
2 tsp. vanilla extract
Chocolate Sour Cream Frosting:
1 C. butter, softened
2 tsp. vanilla extract
1/2 C. unsweetened cocoa powder
1/2 C. sour cream
3-4 C. powdered sugar
Fresh Strawberries for decoration


1. Preheat oven to 350 degrees and line pans with cupcake liners.
2. Sift cake mix into a small bowl to remove any lumps and set aside.
3. In a large bowl, combine eggs, oil, sour cream, milk, strawberry puree, and vanilla extract.
4. Stir in cake mix.
5. Fill cupcake liners 3/4 full and bake for 17-22 minute or until an inserted knife comes out clean.
6. Chocolate Sour Cream Frosting: Beat butter until smooth. Add vanilla extract and cocoa powder and beat again. Add sour cream and 2 cups powdered sugar. Beat and then continue to add in more powdered sugar to reach your desired consistency.
6. Frost cooled cupcakes and top with a fresh strawberry.
