Raise your hand if you like simple but totally delicious cupcakes. Come on, you know you do! I love trying new recipes but shy away from those with a long list of ingredients or those that will take a lot of time. Sometimes all I want is a simple chocolate cupcake. Your Cup of Cake must feel the same way, too, with these simple yet yummy chocolate cupcakes. Oh, and there is cake batter in the frosting, too, so it’s like licking the bowl with every bite.
Chocolate Cake Batter Cupcakes
Makes about 20 cupcakes
Ingredients
Chocolate Cupcakes:
1 Box Devil’s Food Cake Mix
3 eggs
1/2 C. melted butter, slightly cooled (or oil)
1 C. buttermilk or milk
2/3 C. sour cream or plain yogurt
2 tsp. vanilla extract
Cake Batter Frosting:
1 C. butter, softened
1/3 C. yellow cake mix (dry), sifted to remove lumps
2 tsp. vanilla extract
2 Tbsp. milk
3-4 C. powered sugar
Sprinkles and Cherries for decoration
Directions
1. Preheat oven to 350 degrees and line pans with cupcake liners.
2. Sift cake mix into a small bowl and set aside.
3. In a large bowl, combine eggs, butter, buttermilk, sour cream and vanilla extract and whisk until smooth.
4. Add cake mix and stir.
5. Fill cupcake liners 3/4 full and bake for 15-21 minutes or until an inserted knife comes out clean.
6. Let cool.
7. Cake Batter Frosting: Beat butter for 1 minute. Add yellow cake mix, vanilla extract and milk and beat again. Slowly add in powdered sugar until you reach your desired consistency. Taste, if you want a stronger cake batter taste, add in more yellow cake mix.
8. Pipe into cooled cupcakes and top with sprinkles and cherries!
