I have posted apple pie cupcake recipes before, but this one from Spend With PenniesĀ is much faster because you can “cheat” by using a box cake mix and canned pie filling. Ā If you prefer to use fresh apples, a recipe for homemade apple pie filling is below. Ā But a batch of these yummy cupcakes can be whipped up in a jiffy if you find yourself in a pinch for a fall dessert.
Apple Pie Cupcakes
Ingredients
- 1 Box of White Cake Mix
- Ingredients required on the box for cupcakes
- 1 teaspoon cinnamon
- 1 can (22 oz) apple pie filling or 1 recipe Homemade Apple Pie Filling (recipe below)
- whipped cream or ice cream for topping (optional)
Instructions
- Preheat oven to 350 degrees & line cupcake pan with liners.
- Make cupcake batter according to box directions. Stir in cinnamon.
- Chop apple pie filing into bite sized pieces.
- Add 3 tablespoons of cake batter to each cupcake liner. Place 1 slightly heaped tablespoon of pie filling on top of the batter.
- Bake 18-20 minutes.
- Top with ice cream or whipped cream.
Note
The apple pie filling will find it’s way to the center of the cupcake on its own.
Ingredients
- 4 medium apples
- 3 tablespoons water
- 2 tablespoons butter
- 1 teaspoon cinnamon
- ā cup sugar
- 1 tablespoon + 1 teaspoon cornstarch
- 2 tablespoons water
Instructions
- Peel, core and slice apples.
- Melt butter and cinnamon over medium heat. Stir in apples, sugar & 3 tablespoons water.
- Cover and cook stirring occasionally for 4-6 minutes or until very slightly softened.
- In a small dish combine cornstarch and water. Add to pan while stirring and continue to cook until apples are soft (not mushy) and filling is thickened. Let bubble 1 minute. Cool.
