Easter Chick Cupcakes
For the Big Chicks
Standard sized cupcakes (flavor of your choosing)
Yellow frosting
Flaked coconut (sweetened or unsweetened)
Yellow food coloring
Marshmallows (standard or miniature)
Mini Chocolate Chips
Orange frosting
To make these mama and papa chicks, take a standard sized cupcake and frost the top with yellow frosting.
In a medium bowl, mix a few drops of yellow food coloring into 1 cup flaked coconut (you can always make more if you run out, but this is a good ratio to start with). Stir until the food coloring evenly covers the coconut.
If using standard marshmallows, take one marshmallow and roll it in your hands until round. This will be the head for your chick. Take another marshmallow, cut it in half, and form it into a triangular shape. This will be the tail. Stick these pieces on the cupcake to form the chick’s body.
If using mini marshmallows, take six marshmallows and roll them together until you form a ball. This will be the head. Take four mini marshmallows, roll them into a ball so they stick together, and then flatten into triangle. This will be the tail. Stick these pieces on the cupcake to form the chick’s body.
Frost over the marshmallows with yellow frosting. You should have a yellow chick shape. Cover the chick with the yellow coconut to give it feathers. Stick in two mini chocolate chips for the eyes.
To make the beak, I filled a decorating bag with the orange frosting. Using leaf tip #352 (though ANY leaf tip will work), make the beak (think of it like two leaves attached at the bottom).
